1Heat olive oil. Add onion. Cook about 3 minutes, then add mushrooms. Cook 3 minutes more, then add garlic.Cook until the garlic softens. Then add all herbs/spices. Stir to combine. Finally, add tomatoes and drained/rinsed black beans. Cover and heat until warmed through. Serve over rice or polenta.
