Preheat Oven to 400 degrees

Oil the loaf pans

Mix 1 TB ground flaxseed with 3 TB water. Let sit for several minutes (simulates egg)

Mix together all ingredients (including ground flaxseed/water mixture) except baking powder, raisins, and walnuts. Stir well.

Add baking powder and stir well for 30 seconds.

Pour mixture into greased loaf pan(s).

Add Raisins and walnuts. Mix well.

Bake for 30 - 40 minutes, or until a knife inserted in middle comes out clean.
