In a saucepan, combine pumpkin, milk, sugar, salt, spices and butter. Mix well and heat until butter is melted.

Separate one egg and beat the white stiffly.

Lightly beat the remaining egg and egg yolk.

Pour pumpkin mixture over the egg

Fold in stiffly beaten egg white. Cool.

Pour into uncooked pie shell. Top with grated nutmeg.

Bake in hot overn (500F) for 8 minutes. Reduce heat to 325F. Bake 25 - 30 minutes or until set. Cool.
