medium (4-1/8" long)green onions

pound, rawboneless chicken breast

teaspoonspeanut oil
Steps
Sequence Step
1Combine chicken broth, cornstarch, sugar, soy sauce, vinegar and ginger in a small bowl. Set aside.
2Heat oil in a large skillet or wok, add scallions, garlic and red pepper. Cook for two minutes, until combined and fragrant.
3Add chicken, cut into 1" cubes, and cook until borwned all over, about 3 minutes.
4Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
5Serve about 1 cup of chicken and sauce over steamed broccoli mixed with 1/2 cup of rice.
