Pre-Heat oven to 350 degrees and prepare three 9in round cake pans with non stick spray.

Sift together Flour Sugar, Baking powder, Baking soda, Cinnamon, Nutmeg and Salt. Set aside.

In stand mixer on medium speed, mix Eggs, buttermilk, Oil and Vanilla.

Add the dry ingredients slowly to the wet ingredients, mix on slow speed till combined, scrape sides of bowl.

Mix on Med-High for 30 seconds to 1 minute or till creamy.

By Hand, mix in carrots, cabbage, and raisins. Mix well.

Pour into three 9in round cake pans sprayed lightly with oil. Bake at 350 for 25-35 min, or till toothpick poke comes out clean in the center of the pan.

Remove from heat, let stand in pans for 10 min to cool, then turn out to cooling racks, cool completely before frosting.
