Pre heat oven to 350. Butter and lightly flour 3-9" cake pans. Line bottom of pans with parchment rounds if desired.

Sift cake flour, baking soda, baking powder and salt together, set aside.

Add vanilla to buttermilk. (I also delete the vanilla and add 1 teaspoon or either orange or lemon oil same as candy oil for a different flavor)

Using 1/3 of dry ingredients, Alternately add dry ingredients and buttermilk, beginning and ending with flour. Beat until smooth (DO NOT OVERBEAT) Pour batter into pans and bake 20-25 minutes or until done. Cool in pans 10 minutes and turn out on cooling rack.
