I'm concocting this today for lunch w/ my family. A vegetarian soup, to be cooked all morning, using ingredients I already have, so that my mom who is having radiation can eat it (her mouth hurts, soft foods help).
Sautee chopped onions, chopped celery, garlic and olive oil.
Add water, bouillon, rice to mid sized pot. Add onion mixture. Mix in rinsed beans and undrained toms. Spice to taste. Cook to boiling for half of available time (this isn''t really a "timed" soup) and then simmer for the rest of the time of you. Mix in any veggies you want to add more bulk.
