cute squash in half, bake 400 degrees for 30 min. meanwhile, cook rice.
saute onion and mushroom in coconut oil, salt and pepper. add in cooked rice. scoop out flesh of squash reserving the shape. mix flesh into rice mixture. add cranberries, walnuts, sage. mix together. dive into four and scoop back into squash shells.
put back in oven bake another 15-20 minutes until heated through and slightly crisp on top.
