1Toast the corn with the minced garlic until lightly browned. Set aside. Rinse and chop grape tomatoes, avocados, jalapenos, and cilantro. Squeeze the juice from the two limes. Combine and mix all ingredients. Chill. Serve with multi-grain or homemade whole grain tortilla chips.
