Place 1/2 cup milk in an 8-cup saucepan and sprinkle gelatin over the milk. Let sit for 5 minutes.

Combine remaining milk with cream, pumpkin, Splenda, and cinnamon in a blender or food processor. Blend until smooth.

Heat the 1/2 cup of milk and gelatin from step one over low heat, stirring occasionally, until gelatin dissolves.

Add the cream mixture to the heated milk/gelatin mixture and cook over medium heat, stirring occasionally until steam rises.

Remove from heat and ladle into eight 4-oz ramekins/custard cups. Chill until firm. Garnish as desired before serving.
