Make a well of flour on the counter and crack the eggs into the well. Beat the eggs, pulling in a little bit of flour at a time. When the mixture becomes a shaggy mess, begin to add the water a little at a time until you have a ball that is soft, but not sticky. This may take a little more than 1/3 of a cup. Knead for a few minutes, and then let it rest for at least 30 minutes.
