Cream butter, shortening and confectioners sugar together until light and fluffy.

Beat in extract.

Gradually add flour and mix well.

Shape into 1/2" balls and place 1" apart on ungreased baking sheet.

In small bowl, place 2-3 drops of red food coloring. Add 1/2 cup of the sugar and mix well.

In another small bowl, place 2-3 drops of green food coloring. Add the remaining 1/2 cup of sugar and mix well.

Take the bottom of a tablespoon, spray with non stick cooking spray and then dip in the colored sugar.

Flatten dough balls alternately with the back of the spoon, redipping in sugar as needed.

Bake at 375 degrees for 8-10 minutes or until edges are lightly browned.

Remove to wire racks and cool completely.

To make frosting, in small bowl beat the 2 Tbls of butter until fluffy.

Add confectioners sugar, milk and extract. Beat until smooth.

Spread over the botton of half the cookies and top with another cookie to form a sandwich.

To add extra flavor to frosting, can beat in 1/4 tsp peppermint extract and/or add crushed peppermint candies.
