Sequence Step
1drain and rinse black beans
2Saute onions and peppers with olive oil for 5-10minutes until tender
3Add black beans
4add bay leaf and 3 cups of water, cover, bring to a boil, reduce heat and simmer for 45-60 minutes
5Season chicken with remaining ingredients
6Add remaining half of the olive oil a non stick or cast iron pan and sear seasoned chicken on both sides
7Place in a preheated oven on 400 for 7-10 minutes covered
8Remove and set aside
9When black beans are tender, remove bay leaf, drain leaving about an eighth of a cup of liquid and puree in a blender
10drizzle a little sauce under or over the chicken and serve with rice,vegetables, and/or a salad
