drain and rinse black beans

Saute onions and peppers with olive oil for 5-10minutes until tender

Add black beans

add bay leaf and 3 cups of water, cover, bring to a boil, reduce heat and simmer for 45-60 minutes

Season chicken with remaining ingredients

Add remaining half of the olive oil a non stick or cast iron pan and sear seasoned chicken on both sides

Place in a preheated oven on 400 for 7-10 minutes covered

Remove and set aside

When black beans are tender, remove bay leaf, drain leaving about an eighth of a cup of liquid and puree in a blender

drizzle a little sauce under or over the chicken and serve with rice,vegetables, and/or a salad
