1. Combine oil and garlic. Brush over both sides of eggplant slices. Place on a greased bakng sheet. Bake at 425 degrees for 15 minutes. Turn. Bake 5 minutes longer or until golden brown. Cool on a wire rack.
2. Place one layer of eggplant in a greased 1 qt. baking dish. SPrinkle with basil and parmesan cheese. Arrange tomato slices over hte top. Pour a layer of spaghetti sauce. Sprinkle with mozerella cheese. Repeat procedure with additional layers of eggplant. Top with the remaining mozzarella, tomatoes, and basil. Cover and bake at 350 degrees for 20 minutes. Uncover, bake for 5 minutes longer or until cheese is melted.
