Slowly add flour with mixer on medium speed. Mix for four min.

Let rise @85 degrees for 2.5 hours. Then wrap bowl with wax paper and damp towel and refridgerate overnight.

Remove from fridge and knead dough for one min. Put into large muffin cups and let rise for 2. 5 hours. Dough will double in size. Turn over to 375 and cook for 20min. Then cover with foil and cook for 35 more.
