Pound chicken breasts to 3/4 inch thickness.

Heat olive oil over medium heat in a large skillet. Brown chicken on both sides in hot oil, about 7-10 minutes. Remove chicken and drain off excess grease, leaving a tablespoon or two in pan. Add butter to pan if needed for sauté.

Sauté chopped onions, green pepper, mushrooms, and minced garlic in hot skillet until onions and mushrooms are tender. Stir in tomatoes, wine or stock, other herbs and seasonings: oregano; creole, Italian, and Montreal seasonings; pepper and parsley. Salt to taste.

Serve alone or with hot cooked spaghetti or other pasta.
