| 1 | Combine all ingredients, except blueberries, in a large bowl. | 2 | Drop 1/4 cup size servings on an oiled pan or skillet. | 3 | If desired drop blueberries on top of pancake batter once in skillet. This batter is thick and does not bubble. | 4 | Cook for 1-2 minutes on a medium high skillet. Flip when you are able to successfully place the spatula under the pancake. | 5 | Cook for an additional 2 minutes on the other side. | 6 | Top with non-fat regular greek yogurt and some sugar free syrup if desired. |
