blueberries, fresh, organic (optional)

Combine all ingredients, except blueberries, in a large bowl.

Drop 1/4 cup size servings on an oiled pan or skillet.

If desired drop blueberries on top of pancake batter once in skillet. This batter is thick and does not bubble.

Cook for 1-2 minutes on a medium high skillet. Flip when you are able to successfully place the spatula under the pancake.

Cook for an additional 2 minutes on the other side.

Top with non-fat regular greek yogurt and some sugar free syrup if desired.
