Steps

1In a large pot heat olive oil
2Add chopped onions
4Add garlic and saute for another minute
5Meanwhile, rehydrate 1 package maitake dried mushrooms per instructions. SAVE BROTH!
6Add 2 cups sliced baby bella mushrooms to garlic/onion blend in pan and cook until soft. Add more olive oil if needed.
7Add quart of water and bring heat up
8Add 2 cups organic carrots, mushroom stock, cut up rehydrated mushrooms and simmer 15 minutes.
9Add vegetable buillion cube/broth
10Add washed spinach, cover, and turn off the heat.
