Skinny Mashed Potato Frosting

tablespoonsChicken broths

tablespoonsChicken broth - fat free

tablespoonMargarine, light- (I can't believe it's not butter)

dashkosher salt or to taste

dashpepper, to taste

Steps
Sequence Step
1Placed potatoes and garlic in a large pot with salt and enough water to cover; bring to boil. Cover and reduce heat; simmer for 20 minutes or until the potatoes are tender.
2Drain and return potatoes and garlic to pan.
3Add sour cream and remaining ingredients.
4Using a masher or blender, mash until smooth.
5Season with salt and pepper. Keep warm until meatloaf cupcakes are done baking then top the cupcakes with the mashed potatoes and return to over to lightly brown the top.
