1Finely chop apricots. Pour 1 T hot water over them and let sit for 10-15 min.
2Combine dry ingredients. Mix thoroughly so there are no lumps.
3Combine apricots with wet ingresients in separate bowl and mix well.
4Make a well in dry ingredients and pour in liquid ingredients. Use a rubber spatula and mix with a gentle touch. Do not overmix or will not rise.
5Pour evenly into 12 muffin cups. Bake 23-25 minutes.
