Dice potatoes, garlic, and onion and set aside. Rinse well and drain beans. Set aside. Heat olive oil in a large pot (a lid will be needed later). Add the potatoes, garlic,and onions to the pot and saute until fragrant. Meanwhile, shred (or slice half of the cabbage head. Add the cabbage. Add the vegetable stock. Bring to a boil. Add Beans. Reduce heat and cook until potatotes are tender. Add pepper and salt to taste.
