| 1 | cook chicken and set aside | 2 | toast walnuts and coconut- set aside | 3 | cook rice as per directions (about 20 minutes) - set aside | 4 | cook (boil or steam) broccoli and let cool. | 5 | drain pineapple chunks and save juice for the dressing | 6 | mix together pineapple chunks, broccoli, chicken, coconut and walnuts. Slice onions and add also | 7 | Add all to the rice and mix well | 8 | To make dressing in a separate bowl combine soy sauce with the reserved pineapple juice and honey. Mix well.
