1Throw all veggies in the pot, cook them for a few min in the oil. Add the tomatoes and the water. Bring to a boil and then simmer for 1.5 hours.
2Add some salt, pepper, a teaspoon of oregano for flavour during cooking process
3Add some vinegar, say 1 table spoon, half way through the cooking process
