This is a healthy and indulgent snack for those who love a sweet treat after, inbetween of before meals. It is great for lunch boxes and can be frozen.
1. set aside 1/2 cup coconut
2. melt peanut butter in microwave for 40 seconds.
3. place all other ingredients and peanut butter into a food processor and combine
4. add extra water gradually until mix forms a very thick mixture but should not be dry to taste.
5. scoop out small amounts at a time and roll into a ball approx 4cm diameter and then roll in extra coconut. coat well.
6. enjoy!
