Recipe Description This is a delicious way to enjoy pizza and get some great vegetable nutrition at the same time. Use it as a main dish, or serve it as a side. Use frozen cauliflower, or fresh. The bread crumbs can be omitted and the pizza still turns out well. It just produces a softer crust.

1Preheat oven to 450 degrees. Wash the cauliflower and cut into bite-size pieces if you purchased a head. (Or use 12-16 oz of raw or frozen cauliflower already cut into pieces.)
2Place cauliflower in a microwave-safe bowl with a couple Tbsp. of water and cook on high for about 5 minutes.
3Finely chop, pulse in a food processor, or blend cauliflower for about 30 seconds in a VitaMix. Mixture will be slightly lumpy- not totally smooth. You want about 1- 1.5 Cups of cauliflower mixture.
4Stir in 1/4 C egg substitute, or 1 beaten egg, 1/2 C cheese and 1/3 C bread crumbs. (I use Italian seasoned crumbs)
5On a pizza stone or in a pie plate sprayed with non-stick spray, evenly spread the cauliflower mixture about 1/4 in thick.
6Sprinkle seasonings evenly over the top of the cauliflower crust.
7Bake in a 450* oven for about 15 minutes.
8Remove from oven and add pizza sauce and pizza toppings. Finely chopped vegetables work well. (I use reduced fat turkey pepperoni, chopped bell pepper, chopped broccoli, grated carrot, onions and sliced mushrooms.) Top with mozzarella cheese. (** NOTE: Nutrition information listed below is for the crust only. Any veggies you add will increase the nutrition of this pizza with very low caloric cost. Cheese and meats will add calories and fat, so use them sparingly.)
9Return to oven and bake until the cheese is melted and beginning to turn golden brown.
10Wait a couple minutes to slice and serve. The pizza will not have a firm crust the way a traditional bread crust would be. It will be softer. Plates and forks required.
