1Cook rice according to directions.
2Cook onion, green bell pepper, and garlic until tender in a large pot, in the olive oil, stirring constantly.
3Add the remaining ingredients (except rice). Cover, bring to a boil, and simmer over low heat for 30 minutes.
4Mix with cooked rice. Serve.
