Combine egg, vanilla, honey, oil and brown sugar.

Combine peanut butter, oats, salt, chocolate chips and coconut.

Add egg mixture to oats mixture. Stir to combine.

Transfer sticky mass to a parchment lined 9 x 13 inch pan.

Bake at 350 for 15 minutes or until browning at edges.
