Preheat oven at 350 degrees. Spray a spring-form pan with non-stick cooking spray. In a large bowl, mix all wet ingredients together. In a separate bowl, mix all dry ingredients together. Slowly add wet ingredients to dry a little at a time, mixing thoroughly with a had blender. Pour batter into pan. Bake for 40-45 minutes, until toothpick comes out clean in center. Let cool for 20 minutes. Remove from spring form pan and cut into slices. Serve with organic coconut butter, almond butter, Earth Balance or other type of spread.
