-Mix all the dry ingredients in a large bowl.

-Then whisk together the remaining wet ingredients except for the zucchini.

-Mix the zucchini into the wet ingredients.

-Make a well in the middle of the flour mixture and pour in the wet mixture. Fold gently until just combined. Do not overmix.

-Pour into 2 greased loaf pans.

-Bake at 350˚ for 40-55 min.
