Preheat the oven to 335 degrees. Use a pre-made pastry or make a simple pie dough. Roll out and cut to fit tart or muffin pans.

Beat the eggs in a large bowl and combine with the remainder of the ingredients. Stir continuously over low heat until the butter melts and the mixture bubbles and begins to thicken. Don''t overcook. Remove from heat.

Spoon the custard filling into each of the unbaked tart shells, making each one level with the top of the pastry. Bake for 15-18 minutes or until set and a pale golden brown color. Let them cool in the pan for 5-7 minutes then place on a wire rack to cool completely. Serve warm or cold.
