Mix oil and flour over lo-med heat stirring frequently to make a roix. When roix is nutty and caramel colored in about 10-15 min, add chopped veggies and cook till soft about 5 min. Add spices, tomatoes and clam juice. Stir to boil and simmer 15 min. Serve over rice. Can add beans, tofu, chicken or shrimp last 5 min and it will double the protein (roughly).
