| 1 | Cut pork into bite sized cubes. In a skillet, just brown the pork in the olive oil; season with spices and salt and pepper. Add in remaining ingredients; excluding the zucchini. Bring to a boil. Turn heat to med-low and simmer for at least an hour; until pork is tender. Add in zucchini and simmer an additional 15 minutes. Serve with red rice and tortillas. |
