In a med bowl, combine dry ingedients.

In large bowl, mix sugar and olive oil until creamy.

Add vanilla and egg and mix well.

Add dry mixture to wet, half at a time and mix well.

Add milk and lemon juice and mix well.

Roll dough into balls (1 tbs) and place on lightly sprayed, foil lined cookie sheets.

Flatten each ball with a fork dipped in granulated sugar.

Bake at 375 for 8-10 minutes until firm.

Cool on cookie sheet 10 minutes, then slide foil off sheet to cool completely on counter.
