With poultry shears, cut along both sides of backbone the enitre lenght of chicken. Remove whole backbone and tail; skewer neck to skin to back.

Place chicken, skin side up on counter; press down on chicken with hands to break bones so that chicken lays flat

Mix ricotta; parmesan; 1 tsp of basil; 1/2 tsp of tarragon; egg; 1/2 teaspoon of parsley; minced garlic.
