Sequence Step
1With poultry shears, cut along both sides of backbone the enitre lenght of chicken. Remove whole backbone and tail; skewer neck to skin to back.
2Place chicken, skin side up on counter; press down on chicken with hands to break bones so that chicken lays flat
3Mix ricotta; parmesan; 1 tsp of basil; 1/2 tsp of tarragon; egg; 1/2 teaspoon of parsley; minced garlic.
4carefully spoon ricotta mixture between the skin and meat; brush chicken with olive oil and sprinkle with remaining spices.
5Grill over medium indirect heat for 1 1/4 - 1 1/2 hours or until enternal temp reaches 180
