Recipe Description I needed lower carbs than mashed potatoes, so mashed cauliflower works nicely. The 2 potatoes help with the texture of the dish.

Steps
Sequence Step
1Wash and separate the cauliflower into florets.
2Bring water in pot to a boil, then add the cauliflower and potatoes and garlic clove. Cover and reduce heat to medium. Cook for 15 minutes or until very tender.
3Drain and discard all water, and then add milk, butter, sourcream, salt and pepper, and mash, or whip with mixer. Top with chives if desiered.
