cupCheese, cream, low fat

can (15 oz)black beans, canned, drained and rinsed

can, 15 oz (303 x 406)corn, canned - drained and rinsed

can (16 fl oz)tomatoes, canned with green chilies
Steps
Sequence Step
1Put frozen chicken in the crockpot. Put cream cheese block on top. Add beans, rinsed and very well drained. Next add corn, well drained and finish with Ro-Tel diced tomatoes (or any diced tomatoes.) Add spices as desired.
2Cover and cook on LOW for 6-8 hours, stirring every 2 hours if possible.
3Turn off crockpot and let it sit for about 1 hour (it will be less soupy if it cools a little).
4Dhred chicken, if desired.
5Serve over rice or mixed with rice in burritos, tacos, tostada salads, etc.
6Consider adding spices to taste - taco seasoning, fajita seasoning, etc.
