Put frozen chicken in the crockpot. Put cream cheese block on top. Add beans, rinsed and very well drained. Next add corn, well drained and finish with Ro-Tel diced tomatoes (or any diced tomatoes.) Add spices as desired.

Cover and cook on LOW for 6-8 hours, stirring every 2 hours if possible.

Turn off crockpot and let it sit for about 1 hour (it will be less soupy if it cools a little).

Dhred chicken, if desired.

Serve over rice or mixed with rice in burritos, tacos, tostada salads, etc.
