eggplant, peeled (yield from 1-1/4 lb)
Eggplant cubed

Yellow squash

medium whole (2-3/5" dia)
Tomatoes, chopped

white wine

oil, canola or olive

basil, fresh, chopped

Heat oil in pot

Add chopped onion and saute until beginning to soften

add eggplant and squash and continue to saute until eggplant and squash soften

add chopped tomatoes and continue to saute, stirring occasionally

Once liquid from veggies has evaporated, add 1/2 the wine and continue to cook at a simmer

Contine adding wine as needed to keep mixture moist.

When veggies are completely cooked through, about 20-25 minutes, turn off heat and stir in basil.
