eggplant, peeled (yield from 1-1/4 lb)Eggplant cubed

mediumYellow squash

medium whole (2-3/5" dia)Tomatoes, chopped

fliud ounceswhite wine

tablespoonsoil, canola or olive

tablespoonsbasil, fresh, chopped
Steps
Sequence Step
1Heat oil in pot
2Add chopped onion and saute until beginning to soften
3add eggplant and squash and continue to saute until eggplant and squash soften
4add chopped tomatoes and continue to saute, stirring occasionally
5Once liquid from veggies has evaporated, add 1/2 the wine and continue to cook at a simmer
6Contine adding wine as needed to keep mixture moist.
7When veggies are completely cooked through, about 20-25 minutes, turn off heat and stir in basil.
