1Cook quinoa, set aside.
2Saute onion and garlic in oil.
3add jalapeno and sweet potato, sate, 7 minutes.
4Add broth and spices.
5Bring to a boil, then simmer 20 minutes (or until potato is tender).
6Before serving, add quinoa, black beans and spinach.
