Recipe Description
Vegetarian enchiladas using tvp or meatless crumbles9. Not authentic by any stretch of the imagination, but my family loves them! Sometimes I chop up mushrooms very fine and add them to the TVP mixture.

TSP or TVP, hydrated in 1 cup veg broth

medium (2-1/2" dia)
Onion, chopped

olive oil

can (10.75 oz)
tomato soup, undiluted

tomato sauce - 8 oz can

Spices, ground cumin

teaspoon
chili powder

tortillas (approx 7-8" dia)
Tortillas, whole-wheat

shredded cheddar cheese, divided

Soften TVP in 1cup hot vegetable broth (can add 1/2tsp Gravy Master for extra flavor).

Saute onions in Oil (can use veg oil).

Stir Soup, Tomato Sauce, Cumin and Chili Powder into pan with onions.

Stir in TVP.

Spread about 1/4c TVP mixture onto each tortilla. Sprinkle tortillas evenly with 1/2 cup cheese.

Roll up tortillas and arranged in lightly greased 9" x 11" casserole, seam side down.

Pour remaining TVP mixture over tortillas.

Cover and bake in pre-heated 350 oven for 20 minutes.

Uncover, top with remaining cheese and bake an additional 5 minutes, until cheese is melted.
