Recipe Description Vegetarian enchiladas using tvp or meatless crumbles9. Not authentic by any stretch of the imagination, but my family loves them! Sometimes I chop up mushrooms very fine and add them to the TVP mixture.

Ingredients

cupTSP or TVP, hydrated in 1 cup veg broth
1
medium (2-1/2" dia)Onion, chopped
2
teaspoonsolive oil
1
can (10.75 oz)tomato soup, undiluted
1
cuptomato sauce - 8 oz can
1
teaspoonSpices, ground cumin
1
teaspoonchili powder
8
tortillas (approx 7-8" dia)Tortillas, whole-wheat
4
ouncesshredded cheddar cheese, divided
Steps
Sequence Step
1Soften TVP in 1cup hot vegetable broth (can add 1/2tsp Gravy Master for extra flavor).
2Saute onions in Oil (can use veg oil).
3Stir Soup, Tomato Sauce, Cumin and Chili Powder into pan with onions.
4Stir in TVP.
5Spread about 1/4c TVP mixture onto each tortilla. Sprinkle tortillas evenly with 1/2 cup cheese.
6Roll up tortillas and arranged in lightly greased 9" x 11" casserole, seam side down.
7Pour remaining TVP mixture over tortillas.
8Cover and bake in pre-heated 350 oven for 20 minutes.
9Uncover, top with remaining cheese and bake an additional 5 minutes, until cheese is melted.
