I was feeling really tired after work and wanted something simple but healthy for dinner, so I thought of everything I liked in a salad and hit the store. This is what I came up with!

Instructions: Mix light mayonnaise, balsamic vinegar and Old Bay seasoning in small bowl. Add shrimp to bowl and mix then set in refrigerator to marinate for 1 hour. In separate bowl, mix cubed tomatoes sliced onion and coleslaw. Toss poppy seed dressing into coleslaw mixture. Cut avocados in half lengthwise taking out pit. Cut 3 ½ halves into cubes and add to coleslaw. Leave ½ of the remaining avocado for garnish, slicing that lengthwise to place on top of salad when finished. Crush ramen noodles and toss into salad right before serving. Place sliced avocado on top of salad and serve.
