I've combined several recipes to come up with what I think to be the best caramel corn ever!

Preheat oven to 250 degrees.

Spray 2 large foil roasting pans with cooking spray.

In microwave pop 3 bags of plain popcorn and pour them evenly into the 2 prepared roasting pans.

Place the roasting pans with popcorn into the 250 degree oven to keep the popcorn warm while you prepare the caramel.

Melt the butter, sugar, corn syrup, and salt over medium heat and bring to a boil stirring constantly.

Boil for 5 minutes without stirring.

Remove from heat and stir in the baking soda and vanilla. (caramel mixture will fluff up)

Evenly pour the caramel mixture over the warm popcorn.

Stir to coat all of the popcorn.

Place roasting pans back into the oven and allow to cook for 30 mins, stirring well after 15 and then again after 30 mins.

Spread caramel corn out onto waxed paper to break up and allow to cool.

Place into airtight containers and enjoy!
