Kidney beans, raw

Soak beans overnight.

Drain and rinse well. Put in a pot and cover with water. Boil for 30 minutes or until no longer hard.

Drain water and puree roughtly with a stick blender until the mixture comes together, but is not completely smooth.

Saute the onion in the butter. Stir in all the seasonings and remove from the heat.

Add beans to the onion mixture and combine well.

Beat one of the eggs lightly and stir it into the mixture.

Add enough breadcrumbs to make a mixture just firm enough to form into soft patties.

Dip patties firstly in lightly beaten egg, then breadcrumbs.

Shallow fry the patties for approximately 5 minutes per side.

Serve with tomato relish, lettuce, mayonnaise, beetroot, tomato, and red onion in fresh, lightly toasted bread buns.
