Sequence Step
1Soak beans overnight.
2Drain and rinse well. Put in a pot and cover with water. Boil for 30 minutes or until no longer hard.
3Drain water and puree roughtly with a stick blender until the mixture comes together, but is not completely smooth.
4Saute the onion in the butter. Stir in all the seasonings and remove from the heat.
5Add beans to the onion mixture and combine well.
6Beat one of the eggs lightly and stir it into the mixture.
7Add enough breadcrumbs to make a mixture just firm enough to form into soft patties.
8Dip patties firstly in lightly beaten egg, then breadcrumbs.
9Shallow fry the patties for approximately 5 minutes per side.
10Serve with tomato relish, lettuce, mayonnaise, beetroot, tomato, and red onion in fresh, lightly toasted bread buns.
