Grind in a food processor 1 1/2 cups of nuts (I like to do cashews and peanuts).

Add mixture to the hemp protein and the milled flax seed, mix together.

Add the remaining nuts, cranberries and salt, and stir together.

Melt at a low heat the honey and coconut oil.

Pour over dry mixture and stir together.

Slightly beat the egg and add to mixture. Make sure to blend well.

Press mixture into a greased 9x12 pan. You can also use parchment paper as this will make removing the bars easier.

Bake for 16 to 18 minutes in a preheated 350 degree oven.

Remove from oven. If you used parchment paper, remove bars from the pan. If you did not use parchment paper, put pan on a rack. Allow to cool for about 10 minutes.

Carefully cut into bars, and allow to finish cooling.
