Egg Cups




Spinach & Chicken Chili Sausage
Ingredients

package (10 oz)Spinach cooked down

wrapper, wonton (3-1/2" square)Wonton wrappers

Usda default (100 gm - 4 oz)Chicken Sausage (finely chopped)

Steps
Sequence Step
1Preheat oven to 350 degrees
2Use a cupcake pan and spray with Pam
3Cook down spinach with about 1/2 cup of water, salt, pepper and a tablespoon of prepared chopped garlic (Costco)
4Cook Chicken Sausage and drain on a paper towel
5Once all ingrediants are cooked start the assembly 2 wontons per cup, try to mold them in the cup like a little egg holder :)
6Add in about 1 TBSP of the spinach to the wonton cup
7add about 1 tsp of the chicken sausage ontop of the spinach
8Add about 1/4 cup of Egg whites. You may need to use a fork to move the spinach and sausage around to make sure it is all coated in with 1/4 cup of egg whites.
9Once you have filled all 12 cups then sprinkle with a little salt and pepper
10Cook for about 15 to 20 min just until the egg whites set up.
