Heat oil and add onion and bell pepper. Cover and cook for about 10 mins. Add garlic and curry powder and cook until fragrant, about 30 secs.

Add peanut butter and gradually stir in coconut milk. Add chickpeas, tomatoes, and kale, stirring to wilt the kale, about 5 mins, season with salt and pepper to taste.

Simmer until flavors are well blended, about 7 mins. Serve over basmati rice sprinkled with peanuts.
