1Beat eggs and add sugar, beat for 3 minutes until light yellow.
2Add 2 cups of finely grated butternut squash to eggs and sugar.
3In a separate bowl combine 1 cup of flour, the zest from 2 oranges and the zest from 2 lemons, 1 tsp of baking soda, 1/4 tsp of salt and 1 1/4 cup of finely grated almonds.
