Recipe Description Just threw stuff together from my CSA - basically chopped everything into a half inch dice or smaller, sauteed it for a bit then added broth and lentils. It came out pretty good.

Steps
Sequence Step
1saute onions, garlic, and peppers in butter
2curry powder and ginger, salt and pepper
3add sweet potatoes
4add squash
5after 5 minutes or so, add eggplant
6when veggies begin to soften, add 1 can diced tomatoes with juice
7add lentils
8add chicken broth
9cook until ready
