Steps
Sequence Step
1Heat 100 g butter, 15 g sugar, salt and oil in a saucepan until melted, combined.
2Remove from heat, add flour.
3Stir until dough pulls away from sids of pan.
4Press dough into a tart mold.
5Dock the dough.
6Bake at 400 degrees for 15 minutes.
7Puree one ripe mango with 200 g sugar and lemon juice.
9In a double boiler, combine puree and eggs.
10Heat until thickened. Remove from heat and add 80 g butter in pieces.
11Cover mixture directly with plastic to avoid skin forming.
12Refrigerate until cold, thick.
13Cut remaining mango into thin slices.
14Fill tart shell with mango curd.
15Top with mango slices.
