1 | Heat 100 g butter, 15 g sugar, salt and oil in a saucepan until melted, combined. |
2 | Remove from heat, add flour. |
3 | Stir until dough pulls away from sids of pan. |
4 | Press dough into a tart mold. |
5 | Dock the dough. |
6 | Bake at 400 degrees for 15 minutes. |
7 | Puree one ripe mango with 200 g sugar and lemon juice. |
9 | In a double boiler, combine puree and eggs. |
10 | Heat until thickened. Remove from heat and add 80 g butter in pieces. |
11 | Cover mixture directly with plastic to avoid skin forming. |
12 | Refrigerate until cold, thick. |
13 | Cut remaining mango into thin slices. |
14 | Fill tart shell with mango curd. |
15 | Top with mango slices. |
