Season Chicken with salt and pepper. Brown both sides of Chicken in a skillet w/ EVOO over medium high heat.

Put potatoes, onion,garlic, thyme, and lemon slices on bottom of slow cooker. Season with salt and pepper. Place chicken on top and drizzle with honey. Add stock and cover.

Cook, undisturbed for 4 hours on High or 6-8 hours on low.
