In a small bowl combine all the ingredients and mix well (add a little sea salt for extra flavor if desired). Place in the freezer to chill until the dough is easy to handle, about 15 minutes.

Shape the dough into 6 balls, and roll in toppings of choice (chopped nuts, cocoa powder, sprinkles) or leave plain.

Place the truffels into mini cupcake wrappers and return to the fridge until well chilled, about 30 minutes. Enjoy cold.
